Basic MayonnaiseBasic Mayonnaise
Makes approximately 400g
10g smooth French mustard
1 whole COLD 61g egg
4g fine sea salt
2g black pepper, finely and freshly ground
½ lemon rind, finely grated
350ml extra virgin olive oil
30g lemon juice
Put everything but the oil and lemon juice into a food processor. With the motor running add the oil very slowly. When fully incorporated add the lemon juice and mix through. Store in an airtight container in the fridge.
